Ingredients

- 2 lbs potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup milk
- 1/4 cup butter
- 1 packet ranch dressing mix
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- Boil the diced potatoes in salted water until tender.
- Drain the potatoes and return them to the pot.
- Add butter, milk, and sour cream to the potatoes and mash until smooth.
- Stir in the ranch dressing mix and half of the cheddar cheese.
- Fold in the crumbled bacon and green onions.
- Transfer the mixture to a baking dish and top with remaining cheese.
- Bake for 20-25 minutes until cheese is bubbly and golden.
Notes
- Use any type of cheese you prefer.
- For a spicier version, add jalapeños.
