Ingredients

  • 2 lbs potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/4 cup butter
  • 1 packet ranch dressing mix
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil the diced potatoes in salted water until tender.
  3. Drain the potatoes and return them to the pot.
  4. Add butter, milk, and sour cream to the potatoes and mash until smooth.
  5. Stir in the ranch dressing mix and half of the cheddar cheese.
  6. Fold in the crumbled bacon and green onions.
  7. Transfer the mixture to a baking dish and top with remaining cheese.
  8. Bake for 20-25 minutes until cheese is bubbly and golden.
