- 2 pounds potatoes, peeled and cubed
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup milk
- 1/4 cup butter, melted
- 1 packet ranch dressing mix
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- Boil the potatoes in salted water until tender, about 15 minutes.
- Drain and mash the potatoes in a large bowl.
- Add sour cream, milk, melted butter, and ranch dressing mix to the bowl. Mix until smooth.
- Stir in half of the cheddar cheese, bacon, and green onions.
- Transfer the mixture to a greased baking dish.
- Top with remaining cheese.
- Bake for 25-30 minutes or until cheese is bubbly and golden.
Notes
- For extra flavor, add more bacon or different types of cheese.
- This dish can be made ahead and baked just before serving.
