Description
Cheesy mashed potato puffs are crispy on the outside and soft on the inside. They make a great side dish or snack.

- 2 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup green onions, chopped
- 1/4 cup all-purpose flour
- 1 egg
- Salt and pepper to taste
- Oil for frying
Instructions
- In a mixing bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, green onions, flour, egg, salt, and pepper.
- Mix until well combined.
- Form small balls from the mixture.
- Heat oil in a frying pan over medium heat.
- Fry the puffs until golden brown on all sides.
- Remove and drain on paper towels.
- Serve warm.
