Ingredients

  • 2 large zucchinis
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the zucchinis into 1/2 inch thick steaks.
  3. In a bowl, mix olive oil, garlic, salt, pepper, and Italian seasoning.
  4. Brush the mixture onto both sides of the zucchini steaks.
  5. Place the zucchini steaks on a baking sheet lined with parchment paper.
  6. Bake for 15 minutes.
  7. Remove from oven and sprinkle mozzarella cheese on top.
  8. Return to the oven and bake for an additional 5 minutes, until the cheese is melted.
