Cheesy garlic zucchini steaks are a delicious and easy-to-make vegetarian dish. They are packed with flavor and make a great side or main dish.

- 2 large zucchinis
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the zucchinis into 1/2 inch thick steaks.
- In a bowl, mix olive oil, garlic, salt, pepper, and Italian seasoning.
- Brush the mixture onto both sides of the zucchini steaks.
- Place the zucchini steaks on a baking sheet lined with parchment paper.
- Bake for 15 minutes.
- Remove from oven and sprinkle mozzarella cheese on top.
- Return to the oven and bake for an additional 5 minutes, until the cheese is melted.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, you can add red pepper flakes.
- Serve immediately for the best taste.
- You can use other types of cheese if preferred.
