Ingredients

  • 1 medium head of cauliflower, riced
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup diced carrots
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup vegetable broth
  • 1/2 cup chopped fresh parsley
  • 1/4 cup olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Rice the cauliflower using a food processor.
  3. In a large skillet, heat olive oil over medium heat.
  4. Add onion, celery, and carrots. Sauté until softened.
  5. Add garlic, thyme, sage, salt, and pepper. Cook for 2 more minutes.
  6. Stir in the riced cauliflower and vegetable broth. Mix well.
  7. Cook for 5-7 minutes until cauliflower is tender.
  8. Remove from heat and add fresh parsley.
  9. Transfer stuffing to a baking dish and bake for 20 minutes.
  10. Serve warm.

  • Feel free to add nuts or dried fruits for extra flavor.
