A delicious cauliflower stuffing recipe perfect for Thanksgiving.
Ingredients

- 1 medium head of cauliflower, riced
- 1 cup diced onion
- 1 cup diced celery
- 1 cup diced carrots
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup vegetable broth
- 1/2 cup chopped fresh parsley
- 1/4 cup olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- Rice the cauliflower using a food processor.
- In a large skillet, heat olive oil over medium heat.
- Add onion, celery, and carrots. Sauté until softened.
- Add garlic, thyme, sage, salt, and pepper. Cook for 2 more minutes.
- Stir in the riced cauliflower and vegetable broth. Mix well.
- Cook for 5-7 minutes until cauliflower is tender.
- Remove from heat and add fresh parsley.
- Transfer stuffing to a baking dish and bake for 20 minutes.
- Serve warm.
Notes
- Feel free to add nuts or dried fruits for extra flavor.
- This stuffing can be made ahead of time and reheated.
