A simple and delicious carrot dish perfect for Thanksgiving dinner.
Ingredients

- 2 pounds of carrots, peeled and sliced
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 tablespoon of honey
- 1 tablespoon of fresh thyme leaves
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the carrots, olive oil, salt, and pepper.
- Toss until the carrots are evenly coated.
- Spread the carrots on a baking sheet in a single layer.
- Drizzle honey over the carrots and sprinkle with thyme.
- Roast for 25-30 minutes, stirring halfway through, until tender and caramelized.
- Remove from the oven and serve warm.
Notes
- Adjust the sweetness by adding more or less honey.
- You can substitute thyme with rosemary for a different flavor.
- These can be made ahead of time and reheated before serving.
