Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 4 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts
  • 1 cup cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix grated carrots, flour, sugars, eggs, baking powder, baking soda, cinnamon, and salt.
  3. Fold in chopped walnuts.
  4. Spread the mixture onto a greased baking sheet.
  5. Bake for 15-20 minutes until golden brown.
  6. While baking, prepare a clean kitchen towel dusted with powdered sugar.
  7. Once baked, invert the cake onto the towel and roll it up. Let it cool.
  8. For the filling, beat cream cheese, butter, powdered sugar, and vanilla until smooth.
  9. Unroll the cooled cake and spread the cream cheese filling evenly.
  10. Roll the cake back up and refrigerate for at least 1 hour before serving.
