- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 4 large eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts
- 1 cup cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix grated carrots, flour, sugars, eggs, baking powder, baking soda, cinnamon, and salt.
- Fold in chopped walnuts.
- Spread the mixture onto a greased baking sheet.
- Bake for 15-20 minutes until golden brown.
- While baking, prepare a clean kitchen towel dusted with powdered sugar.
- Once baked, invert the cake onto the towel and roll it up. Let it cool.
- For the filling, beat cream cheese, butter, powdered sugar, and vanilla until smooth.
- Unroll the cooled cake and spread the cream cheese filling evenly.
- Roll the cake back up and refrigerate for at least 1 hour before serving.
Notes
- Ensure the cake is completely cooled before applying the filling.
- You can add raisins for extra sweetness.
- Store leftovers in the refrigerator.
