Ingredients

  • 2 cups grated carrots
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 8 oz cream cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix grated carrots, sugar, and brown sugar.
  3. Add flour, oil, eggs, vanilla, baking powder, baking soda, salt, and cinnamon. Mix well.
  4. Pour half of the batter into a greased springform pan.
  5. In another bowl, beat cream cheese, powdered sugar, and lemon juice until smooth.
  6. Spread the cream cheese mixture over the batter in the pan.
  7. Pour the remaining batter on top of the cream cheese layer.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Let it cool before serving.

Notes

  • Store leftovers in the refrigerator.
  • Can be topped with whipped cream.
  • Best served chilled.
