A delicious blend of carrot cake and cheesecake.
Ingredients

- 2 cups grated carrots
- 1 cup sugar
- 1/2 cup brown sugar
- 1 cup all-purpose flour
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 8 oz cream cheese
- 1/2 cup powdered sugar
- 1 teaspoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix grated carrots, sugar, and brown sugar.
- Add flour, oil, eggs, vanilla, baking powder, baking soda, salt, and cinnamon. Mix well.
- Pour half of the batter into a greased springform pan.
- In another bowl, beat cream cheese, powdered sugar, and lemon juice until smooth.
- Spread the cream cheese mixture over the batter in the pan.
- Pour the remaining batter on top of the cream cheese layer.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- Let it cool before serving.
Notes
- Store leftovers in the refrigerator.
- Can be topped with whipped cream.
- Best served chilled.
