Ingredients

- 1 whole turkey (12–14 lbs)
- 1/4 cup Cajun seasoning
- 1/4 cup olive oil
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 1 tablespoon paprika
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 lemon, quartered
- 1 onion, quartered
- 4 cups chicken broth
Instructions
- Preheat your oven to 325°F (165°C).
- In a bowl, mix Cajun seasoning, olive oil, garlic powder, onion powder, paprika, salt, and black pepper.
- Rub the seasoning mix all over the turkey, including under the skin.
- Stuff the turkey with lemon and onion quarters.
- Place the turkey in a roasting pan and pour chicken broth into the pan.
- Cover the turkey with aluminum foil.
- Roast for 2-3 hours, removing the foil for the last 30 minutes.
- Check the internal temperature; it should reach 165°F (74°C).
- Let the turkey rest for 20 minutes before carving.

- Adjust the Cajun seasoning to your taste.
- Let the turkey marinate overnight for better flavor.
- Use a meat thermometer for accurate cooking.
