Ingredients

  • 1/4 cup Cajun seasoning
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 2 bell peppers, chopped
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix Cajun seasoning and olive oil.
  3. Rub the mixture all over the turkey.
  4. Stuff the turkey with chopped onion, celery, bell peppers, and garlic.
  5. Place the turkey in a roasting pan and pour chicken broth over it.
  6. Cover with foil and roast for 2 to 3 hours.
  7. Remove foil and bake for another hour until golden brown.
  8. Let the turkey rest for 20 minutes before carving.
  9. Garnish with fresh parsley before serving.
