A unique twist on traditional Thanksgiving with Cajun flavors.
Ingredients

- 1 whole turkey (12–14 pounds)
- 1/4 cup Cajun seasoning
- 1/4 cup olive oil
- 1 onion, chopped
- 2 celery stalks, chopped
- 2 bell peppers, chopped
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix Cajun seasoning and olive oil.
- Rub the mixture all over the turkey.
- Stuff the turkey with chopped onion, celery, bell peppers, and garlic.
- Place the turkey in a roasting pan and pour chicken broth over it.
- Cover with foil and roast for 2 to 3 hours.
- Remove foil and bake for another hour until golden brown.
- Let the turkey rest for 20 minutes before carving.
- Garnish with fresh parsley before serving.

- Adjust seasoning according to taste.

- Let leftovers cool before refrigerating.
