  • 2 stalks of celery, chopped

  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery. Sauté until soft.
  3. Add chopped cabbage and stir well.
  4. Pour in vegetable broth and add tomatoes.
  5. Season with salt, pepper, thyme, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Remove bay leaf before serving.
