A delicious roasted butternut squash dish perfect for Thanksgiving.
Ingredients

- 1 medium butternut squash, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cinnamon
- 1/4 cup maple syrup
- 1/2 cup pecans, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine butternut squash, olive oil, salt, pepper, and cinnamon.
- Toss until the squash is well coated.
- Spread the squash on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes until tender.
- Remove from the oven and drizzle with maple syrup.
- Add chopped pecans and stir to combine.
- Return to the oven for an additional 5 minutes.
- Serve warm as a side dish.
Notes
- For added flavor, sprinkle with fresh herbs before serving.
- This dish can be made ahead and reheated.
- Adjust the sweetness by adding more or less maple syrup.
