Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cinnamon
  • 1/4 cup maple syrup
  • 1/2 cup pecans, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine butternut squash, olive oil, salt, pepper, and cinnamon.
  3. Toss until the squash is well coated.
  4. Spread the squash on a baking sheet in a single layer.
  5. Roast in the oven for 25-30 minutes until tender.
  6. Remove from the oven and drizzle with maple syrup.
  7. Add chopped pecans and stir to combine.
  8. Return to the oven for an additional 5 minutes.
  9. Serve warm as a side dish.
