- 1 butternut squash, peeled and cubed
- 8 oz pasta of choice
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 cup vegetable broth
- 1/4 cup heavy cream
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Preheat oven to 400°F (200°C).
- Toss cubed butternut squash with olive oil, salt, and pepper, and spread on a baking sheet.
- Roast for 25-30 minutes until tender.
- Cook pasta according to package instructions.
- In a pan, sauté garlic until fragrant.
- Add roasted squash and vegetable broth to the pan and cook for 5 minutes.
- Blend the squash mixture until smooth, then stir in heavy cream.
- Combine the pasta and sauce, mixing well.
- Serve with Parmesan cheese on top.
