Ingredients

- 2 cups of all-purpose flour
- 1 cup of unsalted butter, chilled
- 1/2 cup of granulated sugar
- 1/4 cup of brown sugar
- 3 tablespoons of cornstarch
- 1 teaspoon of salt
- 1/4 teaspoon of cinnamon
- 2 large eggs
- 2 cups of pumpkin puree
- 1 cup of heavy cream
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of nutmeg
Instructions
- Preheat your oven to 375°F.
- In a bowl, mix flour, sugar, cornstarch, salt, and cinnamon.
- Cut in butter until mixture resembles coarse crumbs.
- Add egg yolks and mix until dough forms.
- Roll out dough and place in pie dish.
- In another bowl, combine pumpkin puree, heavy cream, eggs, vanilla, nutmeg, and sugar.
- Pour filling into the crust.
- Bake for 45-50 minutes or until set.
- Cool before serving.
Notes
- Use fresh pumpkin for better flavor.
- Chill the dough for at least 30 minutes before rolling.
- Serve with whipped cream on top.
