  • 2 large eggs
  • 2 cups of pumpkin puree
  • 1 cup of heavy cream
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of nutmeg

Instructions

  1. Preheat your oven to 375°F.
  2. In a bowl, mix flour, sugar, cornstarch, salt, and cinnamon.
  3. Cut in butter until mixture resembles coarse crumbs.
  4. Add egg yolks and mix until dough forms.
  5. Roll out dough and place in pie dish.
  6. In another bowl, combine pumpkin puree, heavy cream, eggs, vanilla, nutmeg, and sugar.
  7. Pour filling into the crust.
  8. Bake for 45-50 minutes or until set.
  9. Cool before serving.
