- 2 pounds of beef chuck, cut into 1-inch pieces
- 2 tablespoons of olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 3 cloves of garlic, minced
- 4 cups of beef broth
- 2 tablespoons of tomato paste
- 1 teaspoon of dried thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef and brown on all sides.
- Remove beef and set aside.
- Add onion and garlic; sauté until softened.
- Add carrots and potatoes; stir for a few minutes.
- Return beef to the pot.
- Add beef broth, tomato paste, thyme, bay leaves, salt, and pepper.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 2 hours, stirring occasionally.
- Remove bay leaves before serving.
