This is the best sourdough focaccia you will ever make. It’s soft, fluffy, and full of flavor.


Ingredients

Scale
  • 500g bread flour
  • 350g water
  • 100g active sourdough starter
  • 10g salt
  • 50ml olive oil
  • Fresh rosemary
  • Sea salt for topping

Instructions

  1. In a large bowl, combine bread flour and water. Mix until no dry flour remains.
  2. Add the sourdough starter and salt. Mix until well combined.
  3. Let the dough rest for 30 minutes.
  4. Stretch and fold the dough every 30 minutes for 2 hours.
  5. Grease a baking pan with olive oil.
  6. Transfer the dough to the pan and spread it out gently.
  7. Cover and let it rise for 4-6 hours at room temperature.
  8. Preheat the oven to 220°C (430°F).
  9. After the dough has risen, dimple the surface with your fingers.
  10. Drizzle with olive oil, sprinkle with rosemary and sea salt.
  11. Bake for 25-30 minutes until golden brown.
  12. Let cool before slicing and serving.
