A refreshing quinoa salad with feta cheese, perfect for a healthy meal.


Ingredients

Scale
  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, bring water to a boil.
  3. Add quinoa and reduce heat to low.
  4. Cover and simmer for 15 minutes.
  5. Fluff quinoa with a fork and let it cool.
  6. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and feta cheese.
  7. Add cooled quinoa to the bowl.
  8. Drizzle with olive oil and lemon juice.
  9. Season with salt and pepper.
  10. Toss everything together and serve chilled.

  • Store leftovers in the refrigerator.
