Ingredients

  • 34 lbs beef roast
  • 1 cup beef broth
  • 2 onions, sliced
  • 4 carrots, chopped
  • 4 potatoes, quartered
  • 3 cloves garlic, minced
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tsp dried thyme
  • 2 tsp rosemary

Instructions

  1. Season the beef roast with salt, pepper, thyme, and rosemary.
  2. Place the sliced onions in the bottom of the crockpot.
  3. Put the seasoned roast on top of the onions.
  4. Add the carrots and potatoes around the roast.
  5. Pour the beef broth over the roast and vegetables.
  6. Cover and cook on low for 8-10 hours or high for 4-6 hours.
  7. Once cooked, slice and serve with vegetables.

Notes

  • Adjust seasoning to taste.
  • For a richer flavor, sear the roast in a pan before placing it in the crockpot.
