Description
A flavorful beef roast cooked slowly in a crockpot for tender results.
Ingredients

- 3–4 lbs beef roast
- 1 cup beef broth
- 2 onions, sliced
- 4 carrots, chopped
- 4 potatoes, quartered
- 3 cloves garlic, minced
- 2 tsp salt
- 1 tsp black pepper
- 2 tsp dried thyme
- 2 tsp rosemary
Instructions
- Season the beef roast with salt, pepper, thyme, and rosemary.
- Place the sliced onions in the bottom of the crockpot.
- Put the seasoned roast on top of the onions.
- Add the carrots and potatoes around the roast.
- Pour the beef broth over the roast and vegetables.
- Cover and cook on low for 8-10 hours or high for 4-6 hours.
- Once cooked, slice and serve with vegetables.
Notes
- Adjust seasoning to taste.
- For a richer flavor, sear the roast in a pan before placing it in the crockpot.
- You can add other vegetables like celery or mushrooms.
