Ingredients

  • 1 cup mashed ripe bananas (about 2 bananas)
  • 1 cup canned pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the mashed bananas, pumpkin puree, sugar, brown sugar, oil, eggs, and vanilla.
  3. In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients. Mix until just combined.
  5. Line a muffin tin with paper liners and fill each cup about 2/3 full with batter.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow muffins to cool before serving.
