Ingredients

- 1 cup mashed ripe bananas (about 2 bananas)
- 1 cup canned pumpkin puree
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the mashed bananas, pumpkin puree, sugar, brown sugar, oil, eggs, and vanilla.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet ingredients. Mix until just combined.
- Line a muffin tin with paper liners and fill each cup about 2/3 full with batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow muffins to cool before serving.
Notes
- Store muffins in an airtight container.
- These muffins freeze well.
- Try adding nuts or chocolate chips for extra flavor.
