- 4 salmon fillets
- 1 ripe avocado, diced
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Place salmon fillets on a baking sheet lined with parchment paper.
- In a bowl, mix avocado, feta, olive oil, lemon juice, garlic, salt, and pepper.
- Spoon the avocado mixture over the salmon fillets.
- Bake in the oven for 15-20 minutes or until salmon is cooked through.
- Garnish with fresh parsley before serving.
