Ingredients

  • 1 lb salmon fillet, skin removed
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 ripe avocado
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1/4 teaspoon garlic powder
  • Salt to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine salmon, breadcrumbs, Parmesan, egg, garlic, dill, lemon juice, salt, and pepper.
  3. Form mixture into meatballs and place on a baking sheet.
  4. Bake for 15-20 minutes until cooked through.
  5. Meanwhile, in a blender, combine avocado, Greek yogurt, lime juice, garlic powder, and salt.
  6. Blend until smooth to make the sauce.
  7. Serve meatballs with the tangy avocado sauce.
