Baked chicken ricotta meatballs with spinach alfredo sauce is a flavorful dish that combines tender meatballs with a creamy sauce.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix ground chicken, ricotta, Parmesan, breadcrumbs, egg, garlic, Italian seasoning, salt, and pepper.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake meatballs for 25-30 minutes or until cooked through.
  5. In a skillet, heat spinach until wilted.
  6. Add heavy cream and chicken broth to the skillet and simmer.
  7. Add mozzarella cheese and stir until melted.
  8. Combine meatballs with the sauce and serve.
