Ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 1 pound smoked sausage, sliced
  • 1 pound shrimp, peeled and deveined
  • 1 pound chicken thighs, diced
  • 6 cups chicken broth
  • 2 cups okra, sliced
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • 2 bay leaves
  • 2 green onions, chopped
  • Cooked rice for serving

Instructions

  1. Heat oil in a large pot over medium heat. Add flour and stir continuously to make a roux, cooking until it turns dark brown.
  2. Add onion, bell pepper, celery, and garlic. Cook until vegetables soften.
  3. Add sausage and chicken. Cook until browned.
  4. Pour in chicken broth and add okra, Cajun seasoning, salt, pepper, and bay leaves.
  5. Bring to a boil, then reduce heat and simmer for 45 minutes.
  6. Add shrimp and cook until pink, about 5 minutes.
  7. Remove bay leaves and stir in green onions.
  8. Serve hot over cooked rice.

Notes

  • Adjust spice level by adding more or less Cajun seasoning.
  • Feel free to use any combination of meats.
  • Gumbo tastes even better the next day.
