- 1/2 cup vegetable oil
- 1/2 cup all-purpose flour
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 1 pound smoked sausage, sliced
- 1 pound shrimp, peeled and deveined
- 1 pound chicken thighs, diced
- 6 cups chicken broth
- 2 cups okra, sliced
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- 2 bay leaves
- 2 green onions, chopped
- Cooked rice for serving
Instructions
- Heat oil in a large pot over medium heat. Add flour and stir continuously to make a roux, cooking until it turns dark brown.
- Add onion, bell pepper, celery, and garlic. Cook until vegetables soften.
- Add sausage and chicken. Cook until browned.
- Pour in chicken broth and add okra, Cajun seasoning, salt, pepper, and bay leaves.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Add shrimp and cook until pink, about 5 minutes.
- Remove bay leaves and stir in green onions.
- Serve hot over cooked rice.
Notes
- Adjust spice level by adding more or less Cajun seasoning.
- Feel free to use any combination of meats.
- Gumbo tastes even better the next day.
