A rich and hearty African chicken peanut stew featuring tender chicken and a creamy peanut sauce.
Ingredients

- 1 lb chicken thighs, boneless and skinless
- 1 cup peanut butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 can diced tomatoes (14 oz)
- 2 cups chicken broth
- 1 cup sweet potatoes, diced
- 1 cup spinach, chopped
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat oil in a pot over medium heat.
- Add onion, garlic, and ginger; sauté until softened.
- Add chicken and cook until browned.
- Stir in tomatoes, peanut butter, and chicken broth.
- Add sweet potatoes and bring to a boil.
- Reduce heat, cover, and simmer for 30 minutes.
- Stir in spinach and cook for 5 more minutes.
- Season with salt and pepper before serving.
Notes
- Serve with rice or bread.
- Adjust spice level by adding chili peppers if desired.
- This stew can be refrigerated for up to 3 days.
