Ingredients

  • 1 cup peanut butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can diced tomatoes (14 oz)
  • 2 cups chicken broth
  • 1 cup sweet potatoes, diced
  • 1 cup spinach, chopped
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat oil in a pot over medium heat.
  2. Add onion, garlic, and ginger; sauté until softened.
  3. Add chicken and cook until browned.
  4. Stir in tomatoes, peanut butter, and chicken broth.
  5. Add sweet potatoes and bring to a boil.
  6. Reduce heat, cover, and simmer for 30 minutes.
  7. Stir in spinach and cook for 5 more minutes.
  8. Season with salt and pepper before serving.
